Everyone wanted to enjoy the original cook of this head of kitchen that is based on the Galician traditional flavors but always with innovation.<\/p>\n<p>Pairings were once again the special elaborations of the winery, included our new\u00a0albari\u00f1o, \u00a0Mart\u00edn C\u00f3dax Vindel, tribute to the Parchment\u00a0Vindel, the document where the music and original letters of the songs of the troubadour Mart\u00edn C\u00f3dax\u00a0<span style=\"line-height: 1.5;\">appeared for the first time\u00a0<\/span><span style=\"line-height: 1.5;\">and whose centenary is celebrated this year .<\/span><\/p>\n<p>The work and the effort of the staff of Culler de Pau could be seen in the complex pairings that they elaborated:<\/p>\n<ul>\n<li>Scallop \u00a0with flavors of the sea, with\u00a0Mart\u00edn C\u00f3dax<\/li>\n<li>Blue fish \u00a0with\u00a0salting and tomato, for\u00a0Mart\u00edn C\u00f3dax L\u00edas<\/li>\n<li>Eggplant with juice of onion,\u00a0osmundea\u00a0and spawns of turbot with\u00a0Organistrum<\/li>\n<li>Octopus in citrus sauce with\u00a0Mart\u00edn C\u00f3dax Vindel<\/li>\n<li>Pickled beetroot with marinating sauce of hen of\u00a0Mos\u00a0and apple,paired with\u00a0Mart\u00edn C\u00f3dax Gallaecia.<\/li>\n<\/ul>\n<p>There are not words to describe the result.
